A2 Ghee is made from the milk containing only A2 beta casein (protein). On the other side A1 Ghee is made from the milk which contains either A1 beta casein or both A1 and A2 beta casein (protein).
There are particular indigenous cow breeds which give A2 milk containing A2 beta casein in their milk. While in the commercial dairies cows like Jersey, Holsteins and other foreign breeds or cross bred Indian cows commonly have A1 beta casein in their milk.
A2 ghee has high nutritional values i.e. Protein, Iron, Sodium, Calcium, Vitamin A, D, E and Omega 3 and 6 fatty acids.
No. Only a very few Indian breeds like Shahiwal, Gir, Red Sindhi, Tharpakar, Rathi, Kankrej, etc. provide A2 milk. Not all Indian cows have A2 milk. Additionally, commercial dairies cross-bred Indian cows with their European counterparts for more milk thus they don’t have unadulterated A2 milk.
A2 ghee derived from A2 milk is very good for our health. It has many medicinal benefits like relieving headaches, snorting, sleeplessness, migraines, hair fall, bad cholesterol to name a few. A2 ghee is even considered super food for pregnant women. It boosts the metabolism and makes the ageing process slow.
A1 ghee which is sometimes also called synthetic commercial ghee is derived from A1 milk is not well accepted by our body. It is one of the major causesfor many opioid and narcotic effects on our body including cancer. A1 milk is further associated with risk factors like type-1 diabetes, arteriosclerosis, coronary heart disease,autism, schizophrenia,sudden infant death syndrome, etc.
Commercial dairy cows are mutated or cross bred for giving high milk quantity. A2 cows generally provide half the quantity or even lesser in comparison to their A1 counterparts. Also because of decreasing availability of grazing land and Indian principles of cow farming, cost of Indigenous cow’s milk is higher than A1 cows which are commercially raised in congested environment and treated as milk machines.
The fat content of A2 milk is less than A1 milk, thus it requires more milk to make A2 ghee than A1 ghee.Thus because of more milk requirement per litre of ghee and high rearing cost of A2 cows, A2 ghee is costlier.
But considering the adverse effects of A1 ghee on your health and impending medical expenses, A2 ghee is definitely not at all costlier but also good for healthy long life.
